Smoked Salmon Rolls with Caviar

  • 8 slices smoked Salmon
  • 1/2 cup creme fraiche (or creme cheese)
  • 2 tsp. finely chopped fresh dill
  • 1 tsp. chopped shallots
  • salt and black pepper to taste
  • 1 tsp. fresh dill sprigs (garnish)
  • 1 ounce caviar (Your choice)
Place sliced smoked salmon, side by side, on 4"x8" sheet of plastic film, and fill with creme fraiche, shallot, and dill mixture. Roll tight, and refigerate overnight. Remove and slice 1" thick, place on serving platter, and garnish with tsp. caviar and fresh dill sprigs.
